We did not pre book these and found a few already sold out. Seemed the very high activity ones sold out, but not sure about that. Everyone on the islands who we interacted with spoke English of some sort. Knowing French would add to the enjoyment of being able to interact with the locals who were not connected to the tourist part of the islands.
